Strawberry rhubarb chia seed jam sounds delicious! You can definitely try using rhubarb. Since rhubarb is tart, you might want to add a bit more sweetener to balance the flavors. Other than that, follow the recipe as is. Enjoy your jam-making!

Oh my gosh!!! I made this in a huge hurry as I decided last minute to bake some treats and I happened to have ingredients for this. I had canned peaches and half and half. Those were my only substitutions. Wow!! Amazing!! I dumped most of the peach juice out assuming the canned version has way more juice than fresh. I reduced the sugar by about 1/4 with the peaches since the canned ones are in a syrup already. It took a lot longer to cook as I used an 8×8 deep square and it likely had more liquid than original recipe. But It was SOOOO GOOD!!!!! My canned peaches were not as great as fresh ones would have been. Not as sweet. But that’s canned peaches for yah. Still…. Between this and the chocolate chip cookies I made – the peach cobbler was the big hit. I poured cream over it hot and we devoured it.
